Summer Favorites at Copper Canyon Grill

Do you have a certain dish that you begin to crave every time summer rolls around? From grilled favorites to fresh vegetables, summer calls for bold flavors – perhaps even some spice! Here are a few of our favorites from our summer menu – come on in and try for yourself!


Shrimp & Grits with smoky Andouille sausage, jumbo shrimp, aromatic vegetables, blackening seasoning and fresh tomato, all resting in creamy white grits. Who doesn’t want to spend a summer in New Orleans? Try this dish and you’ll be transported there for the evening!


Rotisserie Chicken Salad with rotisserie chicken, mixed greens, black beans, tomatoes, jicama, corn, Monterey Jack, chipotle-bleu dressing, avocado, & BBQ sauce. This one is self-explanatory; bring back old summer memories of making Barbecue chicken and eating corn on the cob in the backyard!

Key Lime Pie. This citrusy dessert is the perfect balance of rich and light, so you don’t have to worry about eating a heavy dessert in the heat. Tangy yet sweet, this is the ultimate summer treat!

One Night Only – Sushi Night!


Have you attended one of our Sushi Nights yet? The first two have been so much fun, and we are so excited to introduce Chef Sean Kinoshita to the Blueridge team!

Chef Kinoshita was a former Executive Chef at the world famous Tao Restaurant in Las Vegas, and he has been trained by James Beard Award Winning Chefs. The purpose of these events is to offer a sneak preview of his take on unique sushi roll creations that will be featured in our soon to be opened, Stanford Grill at Tower Oaks. Yes, you read that right – sushi will be part of our expanding menu at our new location!

When summer rolls around, we all try to eat a little healthier and start to crave fresh, vibrant fruits and vegetables again. At Copper Canyon Grill & Stanford Grill, we pride ourselves on creating dishes where the best produce and meats and come together to produce comfort food that is unforgettable!


We all know that fruits & vegetables are good for you, but here are a few little-known facts that you might not have been aware of about our green friends!

– Did you know that eating asparagus can actually make you happier? This stalky vegetable contains Vitamin C and has been proven to raise folic acid levels, which are linked to easing depression.

– Basil has been said to help with stomach cramps, digestion, anxiety, and headaches. In some cultures, it is seen as a symbol of young love.

– Green onions have nutrients that lend to bone, eye, heart, and immune system health.


– Leafy greens have a ton of health benefits! Not only do they help you stay young, they also lower cholesterol, help your vision, give you energy, and can even help in some cases of cancer prevention.

– An apple a day rings true: with it’s natural fructose content, an apple will actually wake you up better than a cup of coffee – without the crash.
