“I had the pleasure of dining at the Glenarden, Maryland location of the restaurant on July 11, 2015 when my sisters and I hosted a luncheon for my mother and her friends in honor of her eightieth birthday. I worked extensively with Sheila, the events coordinator, who was readily available and attentive to every detail. We had a prix-fixe menu that included the Spinach and Artichoke Dip starter, Rotisserie Chicken, Meatloaf Stack, Fish Sandwich and Stanford Cheeseburger entrée choices and dessert. The food, in quite generous portions, was made from quality ingredients, prepared to a queen’s taste and enjoyed by all. The service was great. In every respect, it was a wonderful dining experience, so much so that my family and I dined there again on Monday, July 13th!”

“My first night, I dined with a colleague and we sat at a lovely outdoor table in their patio, along the boardwalk and river. There were so many chicken entree options but I opted for a simple rotisserie chicken salad. It was absolutely delicious, with incredibly moist chunks of chicken (not like the usual dry overcooked type you get at other places), black beans, corn, jicama and mixed in a tasty chipotle bleu cheese dressing. My second visit, I dined at the bar which was quite elegant, and ordered their steak salad, which had the most flavorful croutons, perfect medium rare steak, citrus dressing and delightfully sweet corn bread on the side. Dining at the bar was also fun since the bartenders were friendly and personable. And for those of you who like martinis slightly dirty, Phillipe makes a killer one.”

Summer Menu Items

We shared a post a few weeks ago about summer eats and what we crave, and now we’re back to share some more summer eats! These items are all from the Copper Canyon Grill Summer Menu, so get ’em while they’re hot!


New in a starter portion, try our much-loved Coca Cola Ribs as an appetizer on your next visit! These ribs are slowly braised and sauced until they are falling off the bone in sticky, tangy perfection.

Summer Favorites at Copper Canyon Grill

Do you have a certain dish that you begin to crave every time summer rolls around? From grilled favorites to fresh vegetables, summer calls for bold flavors – perhaps even some spice! Here are a few of our favorites from our summer menu – come on in and try for yourself!


Shrimp & Grits with smoky Andouille sausage, jumbo shrimp, aromatic vegetables, blackening seasoning and fresh tomato, all resting in creamy white grits. Who doesn’t want to spend a summer in New Orleans? Try this dish and you’ll be transported there for the evening!


Rotisserie Chicken Salad with rotisserie chicken, mixed greens, black beans, tomatoes, jicama, corn, Monterey Jack, chipotle-bleu dressing, avocado, & BBQ sauce. This one is self-explanatory; bring back old summer memories of making Barbecue chicken and eating corn on the cob in the backyard!

Eggs Benedict – Not Just for Special Occasions Anymore!

At Copper Canyon and Stanford Grill, one of our favorite brunch items is, of course, Eggs Benedict. However, many of our patrons are reluctant to make it at home because they see it as a daunting task, reserved only for special occasions like Mother’s Day brunch or trying to impress overnight guests. Quite the contrary, Eggs Benedict is really quite simple, using very few ingredients. After the toasted English muffin and ham or bacon all that’s really left is the two intimidating feats of Eggs Benedict: the Hollandaise sauce and poached egg. If you have a skillet and a blender, it’s simple to master either element.

For a four-person serving of Hollandaise sauce you will need:

– 10 Tbsp unsalted butter, melted

– 3 egg yolks

– 1 Tbsp lemon juice

– ½ teaspoon salt

– A dash of cayenne pepper or tabasco

Add the yolks, lemon juice, and salt to the blender and blend on a medium-high setting for about thirty seconds until the eggs are light in color. Then, turn the blender down and slowly pour in the butter, making sure it is not too hot from being melted, to prevent cooking the egg yolks. Add cayenne or tabasco to taste.

If you are new to poaching eggs, a good method for beginners is to use a wide, nonstick skillet filled with an inch and a half of water. Place each egg in a separate custard cup while the water is brought to a slight simmer. Once simmering, add a tablespoon of white wine vinegar, to prevent the yolks and whites of the eggs separating, and slowly push the custard cup with the egg into the water, letting it pour in the water. Wait about four and a half minutes and make sure the heat of the water is maintained. When time is up, fish out each egg with a slotted spoon and place on a paper towel.

Then place the poached egg on a toasted english muffin, bacon or ham, and pour with your homemade Hollandaise sauce.

Now there is no excuse not to make Eggs Benedict every weekend for yourself. Happy eating!

How To Make: Tortilla Soup


One of our favorite days of the week is Friday, and not just because it’s the start of the weekend, but also because our soup of the day is the classic Tortilla! This spicy stew never fails to please (unless, of course, “spicy” isn’t for you!), and today we would like to provide you with a quick and easy recipe to make this soup at home.  With only a few ingredients and fellow spice-lovers to share with, this recipe will become a permanent one in your home!


2 (10.5 ounce) cans condensed chicken and rice soup

1 (10 ounce) can diced tomatoes with green chile peppers

1 (8 ounce) can tomato sauce

8 ounces tortilla chips

4 ounces shredded Cheddar cheese

In a medium saucepan over medium high heat, combine the soup, tomatoes and chilies and tomato sauce. Bring just to a boil and remove from heat. Place some tortilla chips in the bottom of an individual bowl and sprinkle cheese over the chips. Pour soup over the chips and cheese.

Easy, right? Enjoy!

Mother’s Day Brunch

If there is anyone in this world who deserves a day dedicated to them, it’s our moms.  Luckily for them, Mother’s Day is tomorrow which is Sunday, our favorite day of the week!  We can’t think of a better way to bring the family together than our Sunday Brunch.  At our Silver Spring, MD Copper Canyon location and at Stanford, you and your family can celebrate the most special lady in your life over sweet offerings like our French Toast with caramelized bananas and Grand Marnier cream sauce or a Triple Stack of either blueberry or banana nut pancakes.  Of course, if you don’t have much of a sweet tooth, our other breakfast classics such as Eggs Benedict, Eggs Florentine, Omelets, and even Filet Mignon Benedict should be equally enticing!

Did we mention the complimentary refreshments? Everything from coffee, orange juice, and tea to Bloody Marys, Bellinis, Screwdrivers and Mimosas!
