The Perfect Summer Snack for the Kids

During the summer, kids playing outside all day can really work up an appetite. Satisfy your kids cravings between meals with this easy summer snack idea!

Perfect for a tea party or spring picnic with your little ones, just bring bite-sized pieces of Rice Krispies Treats onto skewers with your favorite fresh fruits!

Ingredients

  • 3 tablespoons butter
  • 1 package (10 oz., about 40) JET-PUFFED marshmallows OR 4 cups JET-PUFFED miniature marshmallows
  • 6 cups Kellogg’s Rice Krispies cereal
  • 32 pieces of fresh fruit such as strawberries, kiwi, grapes, etc.
  • 16 (12-inch-long) wooden skewers

Directions

  • In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
  • Add Kellogg’s Rice Krispies cereal. Stir until well coated.
  • Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares.
  • Alternately thread cereal squares and fruit onto skewers. Best if served the same day.

Quick-And-Easy Pool Party Recipes

It’s that time of year again! Summer is knocking on the door and that means it is officially pool party season. At Copper Canyon Grill and Stanford Grill, we know how great a pool party with the family and friends can be so we decided to provide you with a few quick-and-easy recipes to plan the absolute perfect pool party!

Speedy Guacamole

Ingredients

  • 4 avocados, halved, pitted, and peeled
  • 1/2 cup fresh cilantro, chopped
  • 2 tablespoon fresh lime juice
  • Coarse salt
  • Tortilla chips (for serving)

Directions

  • In a medium bowl, combine avocados, cilantro, and fresh lime juice. With a fork, gently mash until guacamole reaches desired consistency. Season with coarse salt. Serve with tortilla chips.

Watermelon Margaritas

Ingredients

  • 1/2 cup sugar
  • 1/2 cup water
  • 3 wide strips orange zest
  • 12 ounces watermelon cubes (about 2 cups)
  • 1/4 cup fresh lime juice
  • 3/4 cup white or silver tequila
  • Lime wedges

Directions

  • In a small saucepan, bring sugar, water, and orange zest to boil over high. Reduce to a simmer and cook until sugar dissolves, 3 minutes. Let syrup cool in a bowl. In a blender, puree watermelon cubes until smooth. Strain through a fine-mesh sieve, pressing on solids, into a pitcher (you should have about 1 cup juice). Stir in syrup, lime juice, and tequila. Fill salt-rimmed glasses with ice, then pour margarita mixture over top. Garnish with lime wedges.

Summertime and the living is easy… The long, lazy days of summer are almost here and it’s time to prepare! Beach weather, watermelons, ice cream trucks, fireworks, barbecues and flip flops are all making their way onto the scene. How are you going to make this summer the best one yet?

Here at Copper Canyon Grill and Stanford Grill, family is very important to us. Some of the best memories are made with friends and family! Remember when you were a kid and you would start planning all of the things you were going to do during the summer even before the bell signaling the end of the year had rung? Well, this year, you can recreate that feeling with a summer bucket list for the family! The options are endless, but here are a few of our favorites to add to your list.

The Art of Muddling

Summer is just around the corner and that means cocktail season is officially underway! The perfect drink will make your summer bash, but you won’t get anywhere without knowing how to muddle. If you’re a fan of our Uptown Old Fashioned then you know firsthand how effective muddling can be. Our take on a classic high ball, it is made with muddled orange and is absolutely delicious.

Muddling is the pressing or crushing of herbs and fruit used in cocktails—drop your fresh ingredients into the bottom of the glass, muddle gently, and then add alcohol. It may sound simple, but there’s an art to muddling that can make or break your hostess reputation.

The trick when it comes to muddling is to lightly press fruit just three times in order to release enough flavor for the cocktail without smashing the fruit. Also never add an herb until the last remaining press to ensure that the herb doesn’t add a bitter taste to the cocktail. Finally, don’t forget that appearance is important. You don’t want your guests to be drinking something that resembles a swamp! So if you learn one thing this summer, learn how to muddle. You may not be a mixologist but your guests will surely mistake you for one.
